Amazing Nachos, taste like Taco Bell Nachos, only better!

This was awsome... but please know that you are about to read a very crappy recipe, as in I don't measure anything when I cook, when I bake I have to measure everything... but cooking is subjective and so I eyeball everything... anyhow...

It's 8 o'clock and Hubby tells me "I'm hungry", then makes a sad face.  I ask him what he wants, he tells me a snack... Okay, think... we have no popcorn, only a handfull of potato chips... mmmm, chips, we have a third of a bag of stale tortilla chips, and since I was planning on mexican one night and a casserole of some sort... I have cheese, sour cream, refried beans... mmm, nachos!  Being weird about melted cheese I prefer cheese sauce to stringy clumpy chewy melted nastiness cheese, but thats just me...

So I pull my ingrediants out of the fridge and turn the oven on to 350 degrees (by the way, I'm annoyed that there isn't a little degrees circle thingy on my keyboard, I looked and I don't see one)

Please ignore the ice tea maker with iced tea drippings on it... Thank You :)

Stale Tostitos Scoops, refried beans, sharp cheddar, pepper jack, a jar of jalepenos, scallions, butter, flower, milk, salt and red pepper flakes.

I put a little drop of beans in each scoop then I put it in the oven... stale chips are stale because they came in contact with moisture, so putting them in the oven crisps them back up...

Then I melted a tablespoon of butter, and added a tablespoon of flour to make a roux... I heated up a cup of milk in the microwave for 1 minute.

When my flour started to brown I slowy added the milk, stirring frequently so it didn't burn, but allowing it to bubble so it got thick.  I ended up not using the whole cup of milk, but how much you will need depends on the roux and how thick it becomes... this is another eyeballing thing.  Then I added grated cheese, about 3/4 or 2/3 of a cup... I didnt measure it... It was about a handfull and a half :)

I also added a good palm full of chopped jalepenos, a pinch of salt and 2 dashes of red pepper flakes... I didn't think it was spicey enough so I added a large dash of cayenne pepper...

I took the chips out of the oven and drizzeled more than enough cheese sauce over them, I added some dallops of sour cream and topped them of with scallions (which I always cut with my food scissors because I think it's easier than chopping)

It was soooooo yummy!  Tasted exactly like Nachos Bell Grande from Taco Bell, except my chips were crispy :)  It disappeared very quickly!

Try it!
